The Vineyard
For the Aspromontis Superior, various vineyards located on the slopes of the homonymous mountain range are used.
Grape Variety
100% Calabrese, cultivated in bush vine style. Calabrese, more commonly known as Nero D'Avola, takes its name from the city of Avola in the province of Siracusa.
Winemaking
The grapes are harvested around September and undergo a 6-day maceration phase. The wine matures for eighteen months in stainless steel.
Aging
Bottle aging for 6 months.
Pairing
It pairs well with red meats, vegetable soups, moderately aged cheeses, and vegetable casseroles.
